I’m sure you’ve heard about gazpacho, but what about its southern cousins salmorejo and ajo blanco. These refreshingly cold soups are just what you need for a hot summer's day. And of course you can’t go wrong with the classic cockel, crisps, olives, and vermouth combination. Salut!
